The pasta—golden with the subtle glow of saffron—was colored only by the careful addition of egg, not cream or shortcuts. It was a dish that dazzled the eyes before it ever touched the palate, and when it did… well, let’s just say, time stopped. Every bite reminded me why carbonara is Rome’s love language.

For a more intimate experience, indulge at Palazzo Talia. Housed in a private Renaissance residence, this refined hideaway offers a curated menu and sommelier-selected wines in a candlelit dining room. But the culinary artistry doesn’t stop at the table—the cocktail program here is worth a spotlight of its own. The in-house mixologist is making an incredible name for himself, turning aperitivo into a true art form. After tasting Negronis from north to south across Italy, I can honestly say: I’ve never sipped a more perfectly balanced aperitif in my life. It had the classic bitter-sweet equilibrium, but with a subtle complexity that felt bespoke. Every element—from the vermouth to the precise citrus oil—was dialed in to perfection. Come for the food, stay for the Negroni… or vice versa.
